Karak Doddh Patti | Chai
CHAI-- creamy, comforting doodh patti/milk tea! Chai is a must-have for every Pakistani/South Asian household. People drink it at breakfast, while meeting each other, after a meal, and of course, at tea time! In fact, many Pakistanis can not start their day wihtout first drinking a cup of chai!
Everyone has their own method and preferences for making chai. We've written our preferred ratios in the recipe, but you can always adjust it. Also, our method for making the perfectly creamy and luscious is that after adding the milk, we let it boil to the top, then lower the heat until it settles, and then bring it back up to medium heat until it boils again. We repeat this step 2-3 times and the result is a karak, strong tea! Another thing to keep in mind is that although we've added cinnamon and cardamom for extra flavor, they are completely OPTIONAL. Your chai will still taste amazing with or without them!
