Raita— spiced yogurt with veggies and herbs. The perfect accompaniment to any Pakistani meal.

 

Raita can be considered as the most underrated dish of Pakistani cuisine. Essentially, it’s spiced yogurt. But it’s so versatile and can amp up any dish. Raita has some very redeeming qualities:
1- it’s very customizable. Don’t want to boil potatoes? Leave them out. Only have cucumbers? Only add them, it’s now cucumber raita. Add extra chaat masala, leave out the chaat masala, take out the peppers or add a ton more— it’s completely up to you.
2- Raita is the base dish for so many other dishes. Add some phulkiyan ( fried besan balls) and it’s now Dahl phulkiyan. Add chanay/chickpeas, mint chutney, and imli chutney, and papris and it’s now papri chaat. Sprinkle cumin seeds and you have zeera raita. There are so many ways to change and adjust up raita!
