Mini Cheesecakes:
Mini cheesecakes— creamy, buttery, simply heavenly.
This recipe was inspired by Eli's Cheesecakes, a bakery in Chicago that is famous for its traditional cheesecakes. We took their cheesecake recipe and turned it into mini cheesecakes!
The base is a shortbread cookie, which gets baked in a cupcake tray, and then filled with cheesecake batter. I’m not sure what the best part of Eli’s cheesecake is— the buttery shortbread crust or the tart but sweet cheesecake. Either way, I promise, you’ll love it!
