Veggie Tacos
healthy, tasty, and quick
Crunchy, flavorful veggies ladled with a thick, spicy sauce, all wrapped in a fluffy tortilla! But that's not even the best part -- this entire dish needs only a handful of ingredients and less than 30 minutes!
You can make this with any veggies you want, they just have to be pre-cooked. You can even do just chickpeas.
A taco sauce substitute is either tomato sauce or tomato paste+water. After adding the sauce, simply cook it until it reaches the thickness you prefer (a chili-like consistency is what I prefer).
It's healthy, easy, quick, comforting, and tasty-- what else do you need?!
